Jeju, a semi-tropical island off the south coast of Korea, is famous for a number of things, including its indigenous breed of horses, juicy citrus fruit and the freshness of its seafood. The freshest of all is supplied by the local fisherwoman known as haenya. Haenya, generally found at beaches and seaside attractions across the island, take a hardcore approach to catching fish. They don't bother with namby-pamby equipment like nets, or even boats for that matter - they simply dive down as far as 20 meters (without oxygen) and come up with fish, mollucs and octopus, which they place a buckets of water until a buyer appears. You select your seafood, and they will, where appropriate, gut it, skin it and chop it into bite-size morsels. Depending on the day, the sea's harvest may include octopus, catfish, o even sea squirts. For those who've never taken the time to explore the culinary possibilities of sea squirts, its fascinating to learn that a life form this primitive can provide tow separate dishes: the tough outer skin, which has a calamari-like texture., and the yolk-like insides, which have a refreshing, briny flavour.
